Tuna Mini Pies {recipe}

Hello, and welcome! Today I'm bringing you a very easy recipe - easy but full of possibilities: tuna mini pies.

These mini pies come together really quick and work well as either as appetizer or as a side dish. And if you're looking for a healthy meal, combine a couple of mini pies with a salad and you're good to go (I've also been know to take one of these to the office with me for a mid-morning snack...).

Ingredients (for approximately eight mini-pies): 

For the crust: 
  • 250 grams of flour
  • 100 grams of butter or margarine
  • a pinch of salt
  • 100 ml of water
  • 1 egg
 For the filling:
  • 1 carrot, diced
  • 1 small onion, diced
  • 200 grams of canned tuna

Instructions: 

  • start with the crust. Mix the flour with the butter and the salt, and add the water slowly. Knead everything together until you have a uniform ball of dough. Let it sit for a few minutes while you take care of the filling.

  • Dice the onion and the carrot (because I have picky kids I usually run them through the food processor instead) and mix them with the tuna

  • Roll the pie crust dough over a smooth surface sprinkled with flour and cut small shapes (two for each mini pie). I like to use cookie cutters for this, but you can free hand the shapes or just use a water glass instead.

  • Spread a bit of the filling on one of the crust cutouts and cover it with the other. Press the edges with your fingers to close the gaps and join both pieces of crust.

  • Place all your mini pies in a slightly greased oven tray.
  • Whisk the egg and "paint" the top of each pie with it
  • Place in the oven for 15 to 20 minutes until the crust turns a nice golden color
 
Serve hot or cold - your preference.
